Our coconut rum infused watermelon wedges were a hit with everyone in the test kitchen, so it makes sense to share this ridiculously simple recipe with our friends! They only take 10 minutes to prepare (so why wouldn’t you?)—then let them soak for just over an hour or until you’re ready to serve.
We included fresh lime juice then sprinkled the finished product with coarse sea salt for a little sha-zing! We can’t wait for you to try these little slices of ‘awesome’!
How to Make Coconut Rum Infused Watermelon Wedges
- 1 watermelon, seedless, cut into 1" thick wedges
- 1 cup coconut rum
- juice of 4 limes
- kosher salt
- Arrange watermelon in a single layer in a large baking pan. Combine the coconut rum and lime juice. Pour over the watermelon wedges and refrigerate for 45–60 minutes.
- Remove watermelon from liquid, sprinkle with salt and arrange on a platter. Enjoy!
