Ideally, the eggs should be fresh, at room temperature and free from any fats or yolk, as it will impede your ability to get that magical foam. We also suggest making this recipe when there’s not too much humidity in the air—the more arid your workspace, the better.
Last, make sure all of your cooking utensils are squeaky clean! From whisk to bowl, you’ll achieve the perfect meringue. Just remember, a little trial and error never hurts!
How to Make the Perfect Meringue Recipe
- Pour egg whites in the bowl of a stand mixer with the whisk attachment. Add lemon juice. Whip eggs whites to a soft peak.
- Add the sugar slowly. When the whites first start to get glossy, add the vanilla and continue to whip until you reach stiff glossy peaks. You can test this by pulling out the whisk and dipping it into the meringue. If a strong wisp appears and holds it shape, that is considered a stiff peak.
You may substitute regular granulated sugar in place of superfine sugar but it won’t dissolve as easily.
