Place honey, water, salt and minced ginger into a microwave-safe bowl or 2-cup glass liquid measuring cup. Place in microwave then bring liquid to a boil. Add mango and microwave just long enough to warm the fruit—about 20 seconds.
Puree mango mixture in a food processor or blender then stir in juice of one lime—the puree should yield about 1 cup of liquid. Set aside to cool completely.
When ready to serve, fill each glass with ice then pour in ¼ cup mango puree to each ¾ cup sparkling water. Add 1 oz vodka, a squeeze of fresh lime juice and one bruised basil leaf to the glass and stir to combine. Ensure the basil is submerged in the liquid then serve immediately.
Notes
Fresh mango can be expensive if it’s not in season but frozen mangos are available year round and are more affordable!
