Cut avocado in half and remove pit. Scoop flesh from avocado skins and place in a bowl. Mash avocado with a fork then season to taste with salt and pepper. Stir in lemon juice. Spread desired amount of mashed avocado over toast and drizzle with olive oil.
Top with sliced tomato seasoned with salt and pepper and enjoy!
