Combine flour, sugar, baking powder and salt in a large mixing bowl. Stir in milk, apple cider, vanilla, beaten eggs and oil. Fold in apples and cinnamon.
Heat 1" oil in a large saucepan over medium heat—oil temperature should be around 350 degrees.
Each fritter will use about ¼ cup of batter. When oil is hot, carefully scoop batter into oil. Depending on the size of the pan, you should be able to do 2–3 fritters at a time. Cook fritters for about 1–2 minutes on each side until dark brown. If they’re only cooked to a golden brown, the dough inside will not be cooked through. They need to be dark, resembling a piece of fried chicken. Set on a cooling rack to drain.
To make the glaze, whisk powdered sugar, milk and vanilla in a medium mixing bowl until completely combined with no lumps. It will be fairly thin.
Dunk each fritter into the glaze, turning until completely coated, then set on a cooling rack to let excess glaze to drip off before serving. Enjoy!
Notes
Use a slotted spoon or spatula when making your homemade fritters so oil can drain from the dough while cooking!
