Ingredients

  • 1 lb vegetables
  • 1 lb water
  • water bowl of ice

Instructions

  • Start with a pot of boiling water and a bowl of ice water. Boil your veggies for 1−2 minutes.
  • Strain veggies in a colander and immediately immerse them in an ice bath to stop the cooking process.

Notes

For a bright and beautiful crudite platter, always blanch your veggies first!
