  • Place one head of cauliflower on a cutting board with the stem side pointing at the ceiling.
  • Pull away the green leaves attached to the large stem.
  • Using a chef’s knife, cut all the way around and under the large stem exposing the smaller ones. Break the head into 3 or 4 smaller pieces and trim the remaining stems close to the florets.
  • Now, easily pull apart the florets to the appropriate size.
