A perfect recipe for juicy pork chops! Simply salt pork chops, let them sit at room temperature for 30 minutes and sprinkle with pepper after they’re done!
Prior to grilling, remove the chops from the refrigerator and season liberally with salt. Allow them to sit at room temperature for 30 minutes while the grill is preheated to medium.
When the grill is hot, blot the moisture from the surface of the pork chops and brush both sides with oil.
Grill the chops 3–4 minutes on the first side, then flip the chops and cook for an additional 3–4 minutes. If you would like to create those cool-looking hash marks on the surface of your pork chops, rotate the chop 90 degrees after about 2 minutes of grilling, then grill an additional 2 minutes before turning the chop to grill on the opposite side.
Once the chops have grilled for the first 6–8 minutes, move them to a cooler part of the grill to finish cooking. Grill until the internal temperature registers 145 degrees.
Remove the chops from the grill onto a serving platter and tent loosely with foil. Allow them to rest for 3–5 minutes. Season with pepper or lemon pepper and a little additional salt if necessary. Enjoy!
