Bring some zest to the table with chipotle lime shrimp! Hot smoky chipotle, fresh lime and cilantro and slightly sweet shrimp make a winning combination.

  • Mix the olive oil, chili powder, salt, garlic powder and brown sugar in a medium-sized bowl until completely combined. Add the peeled and deveined shrimp then stir to coat. Cover the bowl with plastic wrap and refrigerate for at least 1-4 hours.
  • After the shrimp has marinated for at least 1 hour, remove it from the fridge and drain any excess liquid from the bowl.
  • Place a large skillet over medium-high heat and add 2 Tbsp oil to the pan. When the oil is hot, carefully add the shrimp and cook just until they are just cooked through—this will take approximately 1-2 minutes per side, depending on the size of the shrimp.
  • When the shrimp is cooked through, squeeze the juice of half of a lime over the top of the shrimp then sprinkle with chopped cilantro.
  • Transfer the shrimp to a serving dish, crack open a nice cold one and enjoy!

Notes

Shrimp that’s already deveined is usually more expensive to buy. Save a little money and do it yourself with a paring knife—it’s easy!
