In large oven-proof skillet, melt 2–3 tablespoons butter over medium-low heat then arrange a single layer of turnips on top of butter. Sprinkle a little garlic and 1 tablespoon of butter on top then drizzle with cream and healthy splash of chicken broth over turnips. Finish with layer of Gruyere (about ½ cup) and pinch of salt.
Repeat layers twice more; top with black pepper and fresh herbs like sage, if desired.
Place in oven and bake 20 minutes or until top is brown and bubbly.

Feel free to lighten up on the butter and heavy cream–with all that melted cheese you won't even miss it.
