Dump all the ingredients into a blender, starting with the wet ingredients. Blend until smooth.
Heat a large skillet or griddle over medium heat and add a bit of butter to grease the pan.
Pour ¼ cup batter per pancake into the heated skillet. Allow to cook until the edges are browned and the top is bubbly. Carefully flip and let cook for another minute. Repeat with the remaining batter.
Serve immediately with butter and a drizzle of maple syrup.
