This healthy, gluten-free version of the classic zucchini fritters are super easy to make and taste so good - you won't even believe they're made of vegetables.

Make the yogurt sauce by whisking together all ingredients in a bowl. Cover and place in the fridge until ready to serve.
Grate the zucchini and place in a colander with a pinch of salt. Let sit for 5 minutes.
Use a cheesecloth or kitchen towel to wring out the zucchini, getting rid of as much liquid as possible. Once drained, place into a large bowl.
Add the rest of the fritter ingredients and mix to combine.
Scoop ⅓ cup of the fritter mixture and form a little patty. Place on the air fryer sheet. Repeat with the rest of the fritters. You may have to do 2 batches.
Cook in the air fryer at 350 degrees for 10 minutes, then raise the temperature to 425 degrees and cook for two more minutes for that final crisp.
Serve with the yogurt dill sauce and fresh green onions and enjoy!
