This Mexican Street Corn Skillet has all the flavor you love of Elote - made in one pan! Done in just 10 minutes, uses frozen corn, and minimizes the mess.

  • In a skillet, melt the butter. Add the frozen corn and cook for about 8 minutes. (This is a great time to mince the garlic and chop the cilantro.)
  • Add the garlic and cook an additional 1-2 minutes.
  • Remove from heat and add in mayo, cotija cheese, chili powder, lime juice and cilantro. Season with salt & pepper to taste.
  • Enjoy!

Notes

Bonus! This dish warms up very well! Although, it's pretty unlikely you'll actually have any leftovers - it's just too yummy.
