Mix up your happy hour routine with this thyme and key lime cocktail! A splash of St. Germain is a satisfying departure from a traditional gin beverage.

Ingredients

Instructions

  • To make simple syrup, boil water and sugar until dissolved then remove from heat and let thyme and lime steep for about 10–15 minutes. Strain liquid into bowl and set aside.
  • Combine gin, St. Germaine, simple syrup and lime juice in a cocktail shaker then give it a good jiggle.
  • Strain ingredients from the cocktail shaker into a glass then add a splash of club soda. Garnish with 1–2 sprigs of thyme and a wedge of lime. Cheers!

Notes

Be sure to set a timer while steeping the thyme and key lime because steeping too long leads to an acrid taste!
