Add all ingredients to a blender or food processor then purée until completely smooth. Make sure there are no lumps of garlic or bits of chipotle chili remaining. Garnish with a dash of paprika if desired.
Transfer to an airtight container and refrigerate for a minimum of 1 hour to meld flavors. Sauce will keep in the refrigerator for up to a week. Enjoy!
