In a medium-sized bowl, add the einkorn wheat berries and the water. Cover and let sit on the counter in a cool place overnight.
The next day, drain the wheat berries. They are now ready for your favorite breakfast bowl!
To preserve 1–2 days, turn the oven to the lowest setting and transfer the wheat berries to a rimmed baking sheet. Place the wheat berries in the oven and allow them to dry for 1–2 hours.

You can prepare risottos, pilafs and other rice-like dishes using wheat berries!
