Preheat indoor or outdoor grill to medium heat and lightly oil grates.
Remove both ends of zucchini and slice on the diagonal into ½" thick planks. Place zucchini in a large mixing bowl and drizzle with olive oil. Toss to coat and sprinkle with garlic powder, salt and pepper.
Grill about 5–6 minutes per side or until nicely seared and cooked to desired tenderness. Zucchini will continue to soften after removing from grill, so be sure to take them off just before they reach the perfect stage.

Cutting zucchini diagonally—or on the ‘bias’—is a great way to create larger pieces out of a small veggie!
