This quick and easy tomato and goat cheese puff pastry pizza recipe can be served as an appetizer or main dish. You can be certain there won't be leftovers!

  • Preheat oven to 400 degrees. Line baking sheet with parchment paper and set aside.
  • Lightly flour work surface and rolling pin and roll puff pastry sheets out thinly.
  • Top both sheets with half of goat cheese, garlic, parsley, thyme and rosemary then layer with tomatoes. Sprinkle remaining spices and goat cheese on top. Season with salt and pepper.
  • Bake 20-25 minutes or until golden brown. Cool 5 minutes on baking sheet.
  • Slice and serve!

Notes

When selecting heirloom tomatoes, look beyond color and shape. The best ones are heavy, firm and have a bit of shine.
