Preheat the oven to 400°F.
Heat oil in an oven safe pan and fry the Longanisa; cut them into chunks after frying.
Fry onions in the pan until translucent; add the garlic and bell pepper, sauté them.
Add the chopped tomato and sauté also.
Add a splash of water and add all the dry spices- cumin, paprika, salt, and coriander.
Add the tomato paste and cook all together.
Top the dish with eggs and layer it with cheese.
Bake the dish in the preheated oven for 10 -15 minutes.
Serve with fresh herbs and fried potatoes.
