  • Preheat the oven to 425 degrees fahrenheit and line a baking sheet with parchment paper.
  • In a bowl, toss the shredded chicken with the taco seasoning and salsa. Set aside.
  • Spread the halved bell peppers on the baking sheet evenly.
  • Sprinkle the shredded chicken all over the peppers evenly.
  • Sprinkle the shredded cheese evenly over the top.
  • Bake for 10 minutes until the cheese is melted and the bell peppers are slightly cooked but still crunchy.
  • Drizzle with sour cream and top with jalapenos, limes, cilantro, onion, and avocado if desired.
