Whisk the egg whites and cottage cheese in a bowl. Set aside.
Cook the chicken sausage in a skillet over medium heat until cooked through. Once cooked, pour the egg white mix into the skillet along with a pinch of salt and pepper, and scramble until cooked through.
To assemble the quesadillas, sprinkle ¼ cup of the shredded cheddar on a tortilla, followed by ¼ of the egg mixture. Fold in half and place into the freezer for 1 hour.
After each quesadilla has set in the freezer for 1 hour, wrap each quesadilla with parchment paper, then foil, and place in the freezer.
When ready to eat, remove from the freezer and remove the foil. Place in the microwave for 1 minute, then flip over, and microwave for another minute. Carefully remove the parchment paper, and enjoy!
