Mix up your happy hour routine with this thyme and key lime cocktail! A splash of St. Germain is a satisfying departure from a traditional gin beverage.
To make simple syrup, boil water and sugar until dissolved then remove from heat and let thyme and lime steep for about 10–15 minutes. Strain liquid into bowl and set aside.
Combine gin, St. Germaine, simple syrup and lime juice in a cocktail shaker then give it a good jiggle.
Strain ingredients from the cocktail shaker into a glass then add a splash of club soda. Garnish with 1–2 sprigs of thyme and a wedge of lime. Cheers!

Be sure to set a timer while steeping the thyme and key lime because steeping too long leads to an acrid taste!
