balsamic vinegar

Monterey Jack cheese
cut into tiny cubes

fresh basil leaves

salt and pepper
to taste
Instructions
Prepare the bruschetta bread according to the recipe.
Cut the tomatoes into small cubes. In a medium bowl, add the garlic powder, olive oil, and balsamic vinegar and whisk to combine.
Add the tomatoes, Monterey Jack and basil leaves. Toss to coat. Season to taste with salt and pepper.
Notes
If you like it hot, add a few shakes of red pepper flakes to the mix!
