Ingredients

  • Rosé Champagne or sparkling wine, well chilled
  • raspberries
  • baby basil
  • champagne flute
  • large wooden spoon

Instructions

  • Fill Champagne flute almost full with Rosé and gently spoon in a raspberry or two.
  • Bruise basil by pressing it against a cutting board with a large wooden spoon (this will help release the herb's essential oils and aromas) and float atop the drink.
  • Serve immediately, and then repeat!

Notes

Bruising herbs to open up the flavors is one of those little secrets that make all the difference with cocktails, sun tea or even just herb-infused water.
