Longanisa casserole is easy to make recipes that can be served for breakfast or lunch. Although it will take 40-50 minutes of cooking time, you can easily prepare it in batches to heat up before lunch. This wholesome recipe can serve up to four people.

  • Preheat the oven to 400°F.
  • Heat oil in an oven safe pan and fry the Longanisa; cut them into chunks after frying.
  • Fry onions in the pan until translucent; add the garlic and bell pepper, sauté them.
  • Add the chopped tomato and sauté also.
  •  Add a splash of water and add all the dry spices- cumin, paprika, salt, and coriander.
  • Add the tomato sauce and cook all together.
  • Top the dish with eggs and layer it with cheese.
  • Bake the dish in the preheated oven for 10 -15 minutes.
  •  Serve with fresh herbs and fried potatoes.
