Instructions

  • Preheat oven to 400 degrees Farenheit.
  • Mix together the ingredients for the chicken marinade.
  • Add the chicken breasts to a baking dish and coat with the marinade. Let set while the oven preheats.
  • Bake chicken for about 20 minutes, or until the chicken has reached about 150 degrees.
    (You don't want it to be fully cooked before you add the cheese and bruschetta topping or it will dry out.)
  • While the chicken bakes, mix together the bruschetta topping.
  • Once the chicken has baked almost all the way through, pull out of the oven and top with mozzarella cheese and bruschetta topping. Bake until the chicken reaches 165 degrees and the topping has warmed.
