In a bowl, mix together the flour, greek yogurt, olive oil, and salt until it forms a dough. Knead on a floured surface for about 2 minutes, sprinkling the dough with more flour if it becomes too sticky to knead. Form into a ball and let rest for 10-15 minutes at room temperature.
Using a floured rolling pin on a floured surface, roll out the dough into a rectangle or circle. Transfer to an oiled baking sheet.
Bake the crust in the preheated oven for 12-15 minutes or until puffed up, golden, and cooked through. Reduce oven temperature to 350 degrees Fahrenheit.
Top the crust with pizza sauce and shredded mozzarella cheese, then other toppings if desired.
Continue baking for 8-12 minutes or until the cheese is melted and browned as desired. Let cool for 2-3 minutes before slicing and serving.
