Trim the edges of the spaghetti squash and slice in half lengthwise. Depending on the size of your air fryer, you may have to quarter it.
Scoop out the seeds.
Brush the flesh with a little bit of olive oil and a pinch of salt and pepper.
Place flesh side up in the air fryer at 400 degrees for about 30-40 minutes or until the squash is soft and scoopable. Begin checking at the 25 minute mark depending on how big your squash is.
Let cool about 10 minutes before using a fork to scrape the flesh from the skin.
Serve as-is or with fresh herbs and a drizzle of olive oil. Enjoy!
