- 5 oz jar pimento-stuffed green olives
- 8 oz cream cheese room temperature
- 3/4 cup sour cream
- 2 tbsp olive brine
- 1/3 cup blue cheese crumbles plus more to top
Drain the olives and reserve 2 tbsp of the olive brine.
Chop the olives into small pieces.
In a large bowl, beat the cream cheese with an electric mixer until smooth.
Add the sour cream, chopped olives, olive brine, and blue cheese. Beat until completely combined.
Pour into desired serving dish and top with more blue cheese crumbles if desired. Serve with crackers or veggies and enjoy!
