Generously season all sides of the pork butt with salt and pepper.
Turn the Instant Pot on saute mode and add the oil. Once hot, brown each side of the roast for 3-4 minutes until a golden crust forms.
While the roast is browning, whisk together the pineapple juice, soy sauce, onion powder, garlic powder, and brown sugar in a mixing bowl until combined.
When the pork is done browning add the water to the pot along with the soy sauce mixture, pineapple chunks, and sliced onion.
Place the lid onto the Instant Pot and pressure cook on high for 2 hours. Allow natural release for 20 minutes, then quick release.
Remove the pork from the pot and shred with 2 forks. Add back to the pot and mix with the juices and pineapple. Serve over rice or with desired side dishes and enjoy!
