We made a lightened up version of Mexican Street Corn Dip that features Greek yogurt, fresh lime juice, red onion, and fresh cilantro.

  • In a large mixing bowl combine the Greek yogurt, cream cheese, mayo, chipotle powder, chili powder, paprika, lime juice, and a pinch of salt and pepper. Mix until combined.
  • Fold in the sweet corn, cilantro, red onion, and cotija. Garnish with more cilantro and lime wedges if desired. Serve alongside your favorite tortilla chips and enjoy!
