Crumble about 2/3 of the vanilla wafers into a chunky breadcrumb consistency. Layer in the bottom of a serving bowl.
In a bowl, mash 1⁄2 of the sliced banana with the greek yogurt, monkfruit, protein powder, and banana pudding mix. Layer this mixture in the serving glass on top of the vanilla wafers.
Top with sliced banana, a dollop of whipped cream if desired, and the rest of the vanilla wafer crumbs! Optional to chill in the fridge or serve immediately.
