Cut the chicken breasts in half lengthwise and season each side with salt and pepper.
Heat a deep skillet over medium heat and add the olive oil. Once hot, add the chicken and brown each side for about 3 minutes, then remove from the pan.
Add the butter to the pan. Once melted, add the onion, brown sugar, and a pinch of salt. Cook the onions on medium-low for about 20 minutes or until mostly caramelized and soft.
Add the minced garlic and saute for another 1-2 minutes.
Add the broth, mustard, and Worcestershire. Stir to combine and bring to a simmer, then whisk in the sour cream. Taste the sauce and add more salt or pepper if desired.
Add the chicken back to the pan and cook for another 3 minutes per side to warm back up and finish cooking through.
