Preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.
Wash and scrub the sweet potatoes and then dry completely. Cut them into ¼-½" rounds.
Place the rounds on the prepared baking sheet and spray with the oil, flip, and spray the other side with oil. Sprinkle a pinch of salt over the top.
Bake for about 20-25 minutes or until fork tender. Remove and let cool.
While the sweet potatoes are baking, heat a skillet over medium heat and add the butter. Once the butter is melted add the maple syrup and 1/3 cup of brown sugar. Whisk until a caramel-like consistency has formed. Add the pecans and a pinch of salt and sir to combined. Remove from the heat.
In a large bowl, beat the cream cheese, vanilla, cinnamon, and the remaining 1/3 cup of brown sugar until light and fluffy.
Spread a heaping ½ tbsp of the cream cheese mixture over each sweet potato round, followed by a small spoonful of the candied pecans and enjoy!
Notes
Serving size is approximate and will depend on the size of your sweet potato.
