Combine water, sugar and lavender in a small saucepan then bring to a boil. Let simmer for 5 minutes then remove from heat. Next, strain liquid through a sieve to remove lavender bits then set liquid aside.
Combine liquid ingredients in a cocktail shaker filled with ice. You can shake or stir the contents then strain mixture into glasses filled with fresh ice. Garnish with a wedge of grapefruit then serve immediately.

You’ll have enough lavender syrup for the crowd, so just double the cocktail part of this recipe to make a pitcher!
