Summer salad with peaches recipe

Celebrate peach month! Create this summer salad with peaches and baby arugula. Add walnuts, goat cheese and honey butter drizzle to dazzle your taste buds.

Ingredients
salad

Tbsp
extra virgin olive oil
1
lemon
juiced and zested

cups
baby arugula
4 oz
4
peaches
pitted and shaved
4
oz
goat cheese
1
cup
walnuts
toasted
dressing
1
Tbsp
unsalted butter
4
Tbsp
honey
1/2
tsp
kosher salt
divided
black pepper
Instructions
Mix olive oil, lemon zest and juice then toss with the arugula, peaches, goat cheese and walnuts.
Melt butter and stir in honey in small saucepan. Add salt and pepper and whisk.
Drizzle dressing over top of salad and serve.
