These sheet pan chicken fajitas are a delicious and easy macro-friendly recipe that come together quickly and with minimal clean up.

Ingredients

Fajitas

  • 1 lb boneless, skinless chicken breasts cut into equal size strips
  • 2 bell peppers sliced
  • 1 red onion sliced
  • 1 1/2 tbsp fajita seasoning from above
  • 1 tbsp neutral oil

To Serve

Instructions

  • Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  • In a small bowl, whisk together all of the seasoning ingredients until combined.
  • In another large bowl, add the sliced chicken, sliced bell peppers, sliced onion, fajita seasoning, and oil. Toss to coat.
  • Pour the fajitas onto the lined baking sheet and bake for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
  • Serve in a lettuce wrap with sour cream and avocado if desired.
