Sheet Pan Fajitas
Who doesn’t love sheet pan chicken fajitas? This macro-friendly recipe is packed with all of those robust Mexican spices thanks to a blend of chili powder, paprika, cumin, garlic powder, and more. A sheet pan makes prep and clean up easy. Simply throw the cut chicken and slices of bell pepper and onion right on the pan! Lettuce leaves are a perfect vehicle for the juicy chicken and flavorful bell peppers: Use it like a soft tortilla or chop it up for a fajita-loaded salad topped with avocado and sour cream.

Sheet Pan Fajitas Recipe Tips:
+ This is such a great recipe for meal prep. If you’re planning on eating as lettuce wraps, we’d recommend storing the lettuce separate. If you’re eating it as a salad, you can store it all together. Just hold off on mixing in your sour cream and avocado for the dressing.
+ To save a little bit of time, you could easily swap in store bought taco seasoning for the spice blend.
Sheet Pan Chicken Fajitas
Ingredients
Seasonings
- 1 tbsp chili powder
- 1 tbsp paprika
- 1 tbsp salt
- 1 tbsp dried oregano
- 1 tbsp garlic powder
- 1/2 tbsp cumin
- 2 tsp onion powder
- 1 tsp cayenne pepper
- 1 tsp black pepper
Fajitas
- 1 lb boneless, skinless chicken breasts, cut into equal size strips
- 2 bell peppers, sliced
- 1 red onion, sliced
- 1 1/2 tbsp fajita seasoning from above
- 1 tbsp neutral oil
To Serve
- lettuce leaves
- avocado
- sour cream
Instructions
- Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a small bowl, whisk together all of the seasoning ingredients until combined.
- In another large bowl, add the sliced chicken, sliced bell peppers, sliced onion, fajita seasoning, and oil. Toss to coat.
- Pour the fajitas onto the lined baking sheet and bake for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
- Serve in a lettuce wrap with sour cream and avocado if desired.
