Heat a 10-12" cast iron skillet over medium heat and add the oil.
Once hot, add the onion, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables have softened.
Stir in the frozen peas until thawed. Remove from heat.
Add the shredded chicken, chicken broth, cream cheese, shredded cheese, and buffalo sauce. Mix until everything is completely combined and then spread evenly in the pan.
Top with tater tots until the entire chicken mixture is covered.
Place into the oven and bake for 25-35 minutes or until the tater tots are golden brown and crispy.
Serve with sour cream, green onion, and a drizzle more of buffalo sauce if desired and enjoy!
