Buffalo Chicken Tater Tot Casserole

This Buffalo Chicken Tater Tot Casserole is a flavorful high protein casserole recipe full of veggies, chicken, and crunchy tater tots.

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • Heat a 10-12" cast iron skillet over medium heat and add the oil.
  • Once hot, add the onion, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables have softened. 
  • Stir in the frozen peas until thawed. Remove from heat.
  • Add the shredded chicken, chicken broth, cream cheese, shredded cheese, and buffalo sauce. Mix until everything is completely combined and then spread evenly in the pan.  
  • Top with tater tots until the entire chicken mixture is covered.  
  • Place into the oven and bake for 25-35 minutes or until the tater tots are golden brown and crispy.  
  • Serve with sour cream, green onion, and a drizzle more of buffalo sauce if desired and enjoy!
