Buffalo Chicken Tater Tot Casserole

+ You’ll want to make sure you use an oven safe skillet for this recipe so you can transfer it directly from the stovetop to the oven without having to dirty another pan! We love using a cast iron skillet when you need to do this.
+ If you want to cut down on the fat in this recipe, you could substitute a low fat cream cheese here which will also reduce overall calories.
Buffalo Chicken Tater Tot Casserole
Ingredients
- 1 tbsp olive oil
- 1/2 sweet onion, diced
- 1 cup carrots, diced
- 3/4 cup celery, diced
- 3/4 cup frozen peas
- 1 1/2 lbs cooked shredded chicken
- 1/4 cup chicken broth
- 6 oz cream cheese, softened
- 3/4 cup shredded cheese
- 1/2 bag frozen tater tots
- sour cream, to garnish
- green onion, to garnish

Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Heat a 10-12" cast iron skillet over medium heat and add the oil.
- Once hot, add the onion, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables have softened.
- Stir in the frozen peas until thawed. Remove from heat.
- Add the shredded chicken, chicken broth, cream cheese, shredded cheese, and buffalo sauce. Mix until everything is completely combined and then spread evenly in the pan.
- Top with tater tots until the entire chicken mixture is covered.
- Place into the oven and bake for 25-35 minutes or until the tater tots are golden brown and crispy.
- Serve with sour cream, green onion, and a drizzle more of buffalo sauce if desired and enjoy!
