Heat a medium-sized saucepan over medium heat and add the butter. Once melted, add the flour and mix for about 1 minute.
Whisk in the beer and let the beer cook out completely, about 1 minute.
Whisk in the milk, mustard, and garlic powder. Continuously whisk for about 3 minutes or until the mixture has thickened.
Reduce the heat to low and add a handful of the shredded cheese, whisking until completely melted. Continue to whisk in a handful of cheese at a time until all of it is incorporated.
Remove from the heat and serve immediately with pretzel bites and enjoy!
