Classic Beer Cheese Dip
Pretzels and beer cheese has to be one of the best tailgating snacks of all time! There’s just something about the saltiness of the pretzels and the creaminess of the beer cheese that work so well together. We already have a delicious pretzel bites recipe so we thought why not whip up a homemade beer cheese dip to go with it? We’ve taken classic cheeses like cheddar and gouda and mixed them with a light lager and delicious spices for a tasty dip to gobble up as you watch the game.

If you’re entertaining and want to make this beer cheese dip ahead of time, you absolutely can. Just let it cool and then store in an airtight container. When you’re ready to serve, just warm it back up in a pot on the stove for best results.
Classic Beer Cheese Dip Recipe Tips:
+ If you have other cheeses you prefer, you can easily substitute them here. You may just need a splash more milk if they’re not as creamy or melty as the ones we use in this recipe.

Classic Beer Cheese Dip
Ingredients
- 1/4 cup salted butter
- 1/4 cup all-purpose flour
- 1/2 cup light beer
- 2 cups whole milk
- 1 tbsp spicy brown mustard
- 1 tsp garlic powder
- 8 ounce block cheddar cheese, shredded
- 8 ounce block Gouda cheese, shredded
To Serve
- Pretzel Bites
Instructions
- Heat a medium-sized saucepan over medium heat and add the butter. Once melted, add the flour and mix for about 1 minute.
- Whisk in the beer and let the beer cook out completely, about 1 minute.
- Whisk in the milk, mustard, and garlic powder. Continuously whisk for about 3 minutes or until the mixture has thickened.
- Reduce the heat to low and add a handful of the shredded cheese, whisking until completely melted. Continue to whisk in a handful of cheese at a time until all of it is incorporated.
- Remove from the heat and serve immediately with pretzel bites and enjoy!
