We decided to turn one of our favorite Sunday brunch meals - the Denver omelette - into egg bites that are perfect for a busy mid-week morning.

Ingredients

eggs
1
green bell pepper
1/2
onion
3
slices
deli ham
1/2
cup
shredded cheddar cheese
salt and pepper to taste
Instructions
Preheat the oven to 350°.
Dice the bell pepper, onion, and ham into equal size pieces.
Crack all 8 eggs into a bowl, and mix in bell pepper, onion, ham and cheese. Season with salt and pepper
Spray or line a 12 cup muffin tray. Scoop in an equal amount of egg mixture into each cup.
Bake for 20-25 minutes or until a toothpick can be inserted and come out clean.
Enjoy!
Notes
You can make these with just egg whites to cut down on the fat if you're looking for a macro-friendly recipe.
