Denver Omelet Egg Bites
When it comes to breakfast, we are big fans of healthy, easy options that start the day off on the right note. Egg bites have become one of our go-to’s because they’re full of protein and easy to eat! Although the Starbucks ones are delicious, we wanted an option that we could make at home (read: save money) and customize with our favorite add-ins. Bonus – you can make these ahead of time and switch up the flavor with different veggies, meats, and cheeses. We decided to turn one of our favorite Sunday brunch meals – the Denver omelet – into egg bites that are perfect for a busy mid-week morning.

Egg Bites Recipe Tips
+ These egg bites are so easy to make ahead of time and are even freezer friendly! These will stay fresh in an airtight container for up to 1 week in the fridge, or up to 3 months in the freezer. Warm them up in the microwave with a wet paper towel so they don’t dry out.
+ Customize your egg bites with what you have on hand. Other yummy options to add in include broccoli, bacon, spinach, different types of cheese, and chili flakes. Or, up your protein content and include a spoonful of cottage cheese.
+ You can make these with just egg whites to cut down on the fat if you’re looking for a macro-friendly recipe.
+ We love serving our egg bites with a hot sauce like Frank’s Red Hot. It’s a yummy way to add some kick to your morning.
+ Don’t be afraid to double this recipe and make a big batch! You can even make different flavors at once – just crack about 4 eggs for each set of 6 bites you want to make.
Denver Omelet Egg Bites Recipe
Ingredients
- 8 eggs
- 1 green bell pepper
- 1/2 onion
- 3 slices deli ham
- 1/2 cup shredded cheddar cheese
- salt and pepper to taste
Instructions
- Preheat the oven to 350°.
- Dice the bell pepper, onion, and ham into equal size pieces.
- Crack all 8 eggs into a bowl, and mix in bell pepper, onion, ham and cheese. Season with salt and pepper
- Spray or line a 12 cup muffin tray. Scoop in an equal amount of egg mixture into each cup.
- Bake for 20-25 minutes or until a toothpick can be inserted and come out clean.
