Instructions

  • Combine all of the dressing ingredients into a high speed blender and blend on high for about 1-2 minutes until smooth and creamy. Taste and adjust salt and pepper if desired.
  • Assemble the bowls by placing lettuce as your base, followed by grilled chicken thighs, pico de gallo, sour cream, cheese, cilantro, and mashed avocado.
  • Serve immediately and store any leftover dressing in the fridge.
