Combine all of the dressing ingredients into a high speed blender and blend on high for about 1-2 minutes until smooth and creamy. Taste and adjust salt and pepper if desired.
Assemble the bowls by placing lettuce as your base, followed by grilled chicken thighs, pico de gallo, sour cream, cheese, cilantro, and mashed avocado.
Serve immediately and store any leftover dressing in the fridge.
