Pineapple Fizz Cocktail
Sip on a cocktail that’s practically a vacation in a glass. Unsweetened pineapple juice and fresh muddled mint are combined to create this über-delicious, not-too-sweet, pineapple fizz cocktail!
This libation is the vodka mojito’s next-door neighbor. The only difference really being the pineapple juice—but there is a trick to getting this cocktail just right.
You’ll want to combine the fresh muddled mint, powdered sugar, pineapple juice and rum in a cocktail shaker with ice first! Then add the fizz last, after you’ve strained the mixture into the glass.
Garnish with a fresh sprig of mint and a cocktail umbrella!
Pineapple Fizz Cocktail Recipe

Ingredients
Yield: 2 cocktails
- 6 oz unsweetened pineapple juice
- 4 oz light rum
- fresh mint
- 1 Tbsp powdered sugar
- club soda, cold
Instructions
- In a cocktail shaker, muddle about 4 fresh mint leaves then add ice, pineapple juice, rum and powdered sugar. Shake gently then strain into 2 cocktail glasses filled with fresh ice.
- Top the drink with a splash of club soda to taste, stirring gently.
- Garnish with a sprig of fresh mint and enjoy!
Notes
Despite the addition of powdered sugar, this drink isn’t that sweet. If you prefer to have your cocktails a little more aromatic, swap the club soda for lemon-lime soda.
