Let’s be honest—there’s nothing better than a mound of delicious mac ‘n’ cheese. But why deal with the carbs? Our parmesan garlic corn will satisfy that craving in a major way, without the pasta.
Cream cheese, Parmesan, maybe even some cheddar cheese for topping…fromage lovers will go crazy over this dish. We start with two bags of frozen corn because it’s easy, but fresh would be even better!

Parmesan garlic corn recipe
what you'll need
- 3 Tbsp unsalted butter
- 2 16 oz bags sweet corn kernels frozen, or 4 cups fresh corn kernels
- 2 Tbsp cream cheese
- 1/2 cup Parmesan cheese
- 1/2 tsp garlic powder
- 3 - 4 Tbsp milk optional
- salt and pepper to taste
let's do it
- Place a large saucepan or skillet over medium heat and add the butter. Once the butter is melted, add both bags of corn kernels. Stir to combine and cook for about 5–6 minutes until the corn is nice and hot, stirring frequently.
- When the corn is hot, stir in the cream cheese, just until melted, then stir in the Parmesan cheese and garlic powder.
- Remove from the heat. Stir in as much milk as necessary to achieve desired consistency, then season to taste with salt and plenty of black pepper. Serve nice and hot. Enjoy!
One Last Thing
There are a number of options to amp up the flavors: green chiles for spice, maybe broccoli for crispy-crunch, even smoky paprika for complexity.
