Tomato and Spinach Pasta Salad Recipe
Our tomato and spinach pasta salad is pure fun. Spirals of cavatappi noodles make for a whimsical touch that’s inviting to adults and kids.
Ingredients
Yield: 8 servings
- 1 lb cavatappi pasta, cooked according to package
- 1 lb cherry tomatoes, halved
- 4 cups baby spinach
- juice of 2 lemons
- 1/4 cup olive oil
- 1 cup Parmesan cheese, shredded
- 2 Tbsp fresh basil leaves, chopped
- salt and pepper, to taste
Instructions
- Combine all ingredients in a medium bowl and mix.
- Chill in refrigerator until ready to serve.

Use heirloom grape or cherry tomatoes for added nutrition and flavor!
