+ This recipe is one that works so well for meal prep. You may just need to mix in a drizzle of olive oil when you go to eat it if most of the dressing has been absorbed.
+ If you want to cut some of the carbs in this recipe, you can use half the amount of black beans, black eyed peas, and corn.
If you don’t have white wine vinegar on hand, you can easily substitute apple cider vinegar, or another vinegar you have on hand. In a pinch, you could also use lemon juice – just use about half the amount and then dilute it with a little water.
Cowboy Caviar Pasta Salad
Ingredients
Dressing
- 3 tbsp extra virgin olive oil
- 1 1/2 lime, juiced
- 2 tbsp white wine vinegar
- 1 1/2 tbsp honey
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1/4 tsp garlic powder
- salt and pepper to taste
Pasta Salad
- 1/2 lb pasta of choice
- 1 lb chicken, cooked and shredded
- 15 oz can black beans, drained and rinsed
- 15 oz can black eyed peas, drained and rinsed
- 1 bell pepper, diced
- 1 cup corn kernels
- 1/4 cup fresh cilantro, chopped
- 1/2 red onion, finely chopped
Instructions
- Cook the pasta according to package directions, until just al dente. Drain and rinse with cold water to cool the pasta. Set aside.
- In a large bowl, whisk together the olive oil, lime juice, vinegar, honey, chili powder, cumin, garlic powder, and salt and pepper.
- Add the cooked pasta, shredded chicken, black beans, black eyed peas, bell pepper, corn, cilantro, and red onion. Toss until combined.
- Serve at room temperature or chilled.
