Instructions
 

  • Cook the pasta according to package directions, until just al dente. Drain and rinse with cold water to cool the pasta. Set aside.
  • In a large bowl, whisk together the olive oil, lime juice, vinegar, honey, chili powder, cumin, garlic powder, and salt and pepper.
  • Add the cooked pasta, shredded chicken, black beans, black eyed peas, bell pepper, corn, cilantro, and red onion. Toss until combined.
  • Serve at room temperature or chilled.
