High Protein Egg Salad
Ingredients
- 8 hard boiled eggs
- 1/2 tbsp Dijon mustard
- 1/2 cup cottage cheese
- 1/2 tsp apple cider vinegar
- pinch of salt and pepper
- 1/4 cup chopped green onion
- 1 tbsp fresh dill
Instructions
- Chop the hardboiled eggs up into small pieces and set aside.
- In a mixing bowl combine the remaining ingredients until combined, then fold in the eggs until completely incorporated.
